Vintage ConditionsA continued dry spell throughout the growing season restricted yields and aided in fruit flavour development. Late spring rains provided a well timed boost to the vines prompting fresh growth around berry development. Scattered heavy falls and at times, hail storms caused some crop loss, however the months leading up to harvest were mild but dry allowing for good ripening.
Grape VarietalCabernet Sauvignon (67%); Merlot
Vinification and MaturationVinified in a mixture of static, rotary and open top fermenters for up to a period of eight days on skins. A portion (25 percent) of the final blend underwent extended maceration on skins for a period of three weeks which aided in softening tannins, filling out the palate and creating a supple but rich mouthfeel. After pressing, the wine was matured in tank in contact with American and French oak for up to nine months prior to the final blending and preparation for bottling.
