The ConditionsMargaret River experienced a warm, dry vintage in 2010, resulting in rapid, uniform ripening with great retention of flavour and natural acidity at full ripeness. Moderate temperatures throughout March and April delivered near perfect conditions for a long ripening period in the red varieties, allowing flavours to develop to their full potential.
The Grapes85% Cabernet Sauvignon, 15% Merlot
The StoryThe grapes were pinched in the cool, dark cover of night before being transferred to static fermenters. After fermentation, the evidence was concealed in tank for a period of time to soften the tannins. The wine was then detained in new, one and two year old oak for maturation before a final blending and bottling allowed its release.
