The ConditionsThe 2011 vintage had good rainfall throughout the growing season which ensured that the soil had good moisture content. This combined with the milder temperature enable a slow period for ripening. Late season rain did result in earlier picking than normal within some regions and hence the picking sugar levels are slightly lower than ideal. Flavour development was good due to the milder temperatures throughout the day.
The StoryOnce the grapes reached their optimum maturity level, they were captured in the cool of the night and promptly delivered to the winery. The grapes were then crushed into drainers where the finest free-run juice was separated from the skin. This juice was then delicately handled through the juice clarification and fermentation stages, all the time being kept separate to allow for the best possible blending options. Once fermentation and clarification was complete, a blend was put together to ensure consistency.
