Vintage ConditionsThe 2011 vintage in Waipara was characterized by early flower set followed by a cool, dry ripening season which was ideal to capture the pristine fruit and floral aromatics of the Pinot Gris.

Vinification and MaturationThe majority of the fruit was carefully hand harvested and whole bunch pressed ensuring only the finest low-phenolic free run juice was obtained. Settled lightly before being racked with light solids and inoculated with an aromatic yeast strain for fermentation. Fermented to dryness at cool temperatures 12°-15°C for three weeks before being refrigerated on full yeast lees for two months. The wine was blended, lightly fined and balanced before being bottled.
