Vintage ConditionsThe 2009 vintage in Margaret River produced exceptional ripening conditions which have resulted in richly flavoured wines with fantastic varietal intensity. Following the cool finish to 2008, the ripening months of January, February and March saw a series of prolonged periods of warm weather punctuated with short cool, dry spells. This allowed for slow ripening which retained natural grape acids and produced great flavour concentration in all our varieties with the red varieties also showing remarkable colour intensity, tannin ripeness and varietal definition.

Vinification and MaturationThis wine is only the second vintage of Metricup Road Cabernet Sauvignon produced by Evans & Tate. The fruit is grown in the Wilyabrup area within the Margaret River winegrowing region of Western Australia which is renowned for producing exceptional quality Cabernet Sauvignon. The majority of vineyard Blocks were picked at night with the fruit then being cold soaked on skins at 5C for four days in a fermenter which helped to maximise colour intensity and stability. This technique also encourages bright, lifted fruit flavours and aromatics in the end wine and allows the fermentation to be pressed early thus ensuring a soft texture in the end wine. All batches were thoroughly aerated during fermentation to maximise yeast health, colour intensity and a fine tannin structure to further ensure softness in the end wine. Seed removal was also undertaken on skins to assist in achieving this. After ~7 days of fermentation, most batches were pressed to tank to finish primary fermentation with a special parcel being selected to remain on skins for 8 weeks to contribute complexity and texture to our Cabernet style. Once dry, each Cabernet parcel was racked separately off lees into new (45%) and 1yr old (55%) French oak barriques. Each parcel underwent malolactic fermentation in barrel and spent up to 18 months in oak with each batch being racked every 3 months. Following maturation, the wine was carefully blended following trials on the tasting bench before being lightly fined with fresh free-range egg whites and filtered once prior to bottling and maturation.
