Vinification and MaturationThe grapes were picked in the coolest part of the night and gently crushed in an airbag press with the highest quality free run juice kept separate and fermented similar to a white wine. A floral yeast was added to the juice and the fermentation was held at around 15°C for its duration to ensure freshness and bright fruit aromas in the end wine. Fermentation was carried out to retain maximum fruit flavour and aromatic intensity. When the ferment was complete, the wine was held cold and stabilised before bottling under screw cap.

PalateThe palate of this wine shows the vibrant flavours exhibited on the nose. Beautiful tropical flavours of pineapple and guava are well balanced by clean lemon and lime citrus notes. The palate is clean and sweet with perfect balanced acidity providing length and structure to this modern style of wine.
