Hand-picked and whole bunch pressed. Pressed firmly to extract higher level of phenolics. We are chasing the textural qualities phenolics bring to Riesling, specifically the fine grapefruit pith elements. 50% Barrel fermented in a French oak puncheon (500L), 50% stainless steel. German yeast isolate Siha 7 used to enhance the terpenic qualities and reduce ester development which can come with wild ferments. Tank ferment halted prior to finish maintaining some residual sugar as a balance to the minerally acid line. Bottled September 2013.
