The fruit was de-stemmed into one tonne open fermenters where it was left to undergo wild/ natural fermentation. The ferment was hand plunged twice daily for the duration of the 8 day ferment. The wine was left on skins for a further 7 days after which it was pressed off to tank then run off to barrel after approx 12 hrs. Maturation took place in 2nd and 3rd use French Oak puncheons (500L) to minimise the influence of new oak characters. The wine was sulphured in barrel after malo lactic fermentation (MLF).After 18 months, the wine was racked out of oak to tank where it was lightly filtered. Bottled: Sept 2013. Floral and red berry fruit with a nuanced spice and subtle earthiness on the nose are supported on the palate with a finely textured tannin profile. This wine has a mid-weight finesse and real elegance about it.
