Harvest Date: 7 March 2013 Baume: 12.3 pH: 3.42 Titratable Acidity: 6.5
Clone: MV6 20% Whole Bunches, balance was destemmed and whole berries tipped over top of whole bunch to allow an element of carbonic maceration. Wild/natural/indigenous yeast ferment with no pigeage, delestage or pumping over. Pressed off and matured in older French Oak puncheons (500L) to minimise oak influence. 11 months in barrel. Unfined and unfiltered before bottling in March 2014, so there’s a few bits but, hey, it’s low intervention.Items are packed with care for delivery.
